Why smoke is smoke and not really!

Although smoking using conventional smoking techniques such as smouldering, friction and steam smoking is still widely used in the food industry, in the long-term these conventional smoking techniques are inferior to liquid smoke for a highly productive and sustainable production on a large scale. More effective smoking methods are continually being further developed, in particular with regard to health issues, cost savings and the environment. Accordingly, producers of smoked foods are increasingly turning to innovative processes such as the Clean Smoke® process, and instead work with regenerated, purified smoke - such as our proFagus Pure Smoke® products, or aroma blends from the BeechSoul series.

The reasons for this are simple: the results are convincing, reliable and sustainable. The smoked foods are refined with regenerated, purified beech wood smoke, from conventional smoking methods. They can either be used to generate smoke through atomisation systems or in the form of liquid applications such as drenching, showering or co-extrusion. Highest product quality

Regular inspections and compliance with the most rigorous European industry standards ensure a consistently high level of quality. In addition, the products are processed according to the known quality standards as raw materials for the food industry.

Clean Smoke process

A precisely dosed quantity of pure smoke and air at a pressure of approximately 6 bar are brought together in a dual-fuel nozzle in the smoking chamber.

On leaving the two-substance nozzle, the compressed air is de-pressurised to atmospheric pressure. The kinetic energy released during the process converts the liquid smoke product into an aerosol. It is important that the excess liquid smoke quantity does not enter the environment, but rather is fed back into the smoke generation system. This creates a closed system, which protects the environment and utilises the pre-cleaned smoke product almost completely.

Clean smoke is smoke because it originates from the combustion of biomass, i.e. wood. In this respect, the contained liquid droplets are smaller than 50 μm. In the case of fog, the droplet size is above this limiting value. This process is suitable for cold and hot smoking processes. Maintenance and cleaning

Its low tar content makes it easier to maintain and clean the smoke house, therefore helping to reduce operating costs. Pure Smoke® products are obtained from purified smoke condensates, which means that harmful and environmentally polluting substances in the smoke such as tars, ash and PAHs are removed. Pure Smoke® is also highly concentrated and can, therefore, be used economically. It is suitable for various types of application such as atomisation in smoke houses known as the clean smoke process – dipping or spraying.
